WHY?

Because there are wines that need more time to show their best. Because it allows us to travel to the past. Because the wines are alive and, like the children, they are evolving and developing different facets. Why not?

WHERE?

Where there are no sudden changes in temperature or strange odors (neither in the kitchen nor in the bathroom). Where the bottles do not receive sun strokes (in a showcase, no). Yes in the underground or cellar (in a fresh closet or the warehouse of an apartment).

HOW?

As you sleep or you should sleep: horizontally so that the corks of the bottles remain moist and expanded. Like a dormouse. Like Six Feet Under. Like a sailboat in the mirror. Like a whirling cat.
